Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
½ cup Butter or margarine, softened
2 tablespoons Honey
1 tablespoon Lemon juice
½ teaspoon Grated Lemon peel
¼ cup Chopped natural American pistachios
Beat together butter, honey, lemon juice and lemon peel until smooth. Blend in pistachios. Serve with Scandinavian Lefse.
