Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.








2 tablespoons Minced onion
1/2 teaspoon Curry powder
2 tablespoons Butter or margarine
Water
1 can (14 1/2 oz.) Regular-strength chicken broth
1 cup Long-grain rice
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/2 cup Coarsely chopped American pistachios
1 Large Golden Delicious apple, cut into chunks
Sauté onion with curry powder in butter until tender. Add water to chicken broth to equal 2 cups. Combine all ingredients; heat to boiling. Pour into 2-quart baking dish or casserole. Cover and bake at 350º F 40 to 45 minutes or until rice is tender. Stir once during cooking.
