Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.








1 Egg
2 Egg whites
¼ teaspoon Salt
1/8 teaspoon Pepper
2 tablespoons Freshly squeezed lemon juice
½ cup Margarine
2 tablespoons Boiling water
1/3 cup Coarsely chopped, roasted American pistachios
Combine, egg, egg whites, salt, pepper, and lemon juice in electric blender. Blend for 30 seconds until thoroughly “fluffed”. Melt margarine in saucepan or microwave oven until melted and foaming hot. While whirring blender, remove center “pour hole” part of lid and slowly pour margarine into egg mixture, incorporating it well. In similar manner, slowly pour in boiling water. Stir, don’t whir, in pistachios. If you prefer a slightly thicker sauce, turn it into top of double boiler, and cook over simmering water, stirring with wire whip, until thickness is desired.
