Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.








5 ounces Mortadella, thinly cut
1/3 cup or 5 ounces Mascarpone cheese
3 ½ tablespoons Butter
1 1/3 cup Milk
1 ¼ cup Flour
2 Eggs
1 Pinch of salt
¼ cup Pistachios, roasted chopped
Prepare pancake mix by combining flour and eggs in a bowl. Whisk mixture and add 2 tablespoons of melted butter and milk. Mix well to eliminate any lumps using a blender if necessary and when ready set aside for a couple of hours.
Heat a large non-stick pan and grease with remaining butter before each pancake. When pancake is cooked, set aside to cool and trim slightly to obtain squares.
Spread a layer of light mascarpone cheese on pancake and cover with mortadella. Carefully roll as tightly as possible. Set aside to rest and cut like sushi.
Serve pancake roll with cut side up, sprinkled with chopped pistachios.
