Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.
½ cup Graham cracker crumbs
1/3 cup Coarsely chopped natural American pistachios
1/3 cup Chopped red candied cherries* (optional)
1 quart Vanilla ice cream, softened
3 tablespoons Rum
Chopped natural American pistachios
Candied cherry slices *
Place 8 paper or foil baking cups in muffin tin. Gently rub skins off pistachios; coarsely chop. Stir crumbs, pistachios and cherries into softened ice cream. Fill baking cups to top with mixture. Garnish with chopped pistachios and cherry slices. Freeze at least one hour or until firm. Before serving, let stand at room temperature 10 minutes.
