Pistachios, when eaten with high-carbohydrate foods, may result in lower than expected blood sugar levels, an important factor in reducing risk of diabetes.








1 Breast of smoked duck
2 Fresh California plums, sliced
1/2 pound Phyllo pastry sheets
1/3 cup Olive oil
1 1/2 cups Coarsely chopped, natural American pistachios
Pre-heat oven to 400° F. Slice, at an angle, breast of smoked duck into 25 (1/4-inch thick) slices. Slice plum into 25 pieces; sauté in butter and sugar to caramelize. Layer 3 sheets of phyllo dough, individually brushed with olive oil. Cut in half and then cut to make a total of 6 sheets. Fill ends of strips with a slice of smoked duck and plum; sprinkle with chopped pistachios. Fold each strip into a triangle. Brush each triangle with olive oil. Repeat, using remaining phyllo dough. Bake 10 - 15 minutes, or until golden brown.
