Savory Pistachio Snack Mix
Ingredients
½ cup shelled pistachios
½ cup chickpeas
½ cup pumpkin seeds
1 tablespoon olive oil
1 teaspoon chopped fresh rosemary (or ½ tsp dried)
Pinch of sea salt (to taste)
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine the chickpeas, pistachios, and pumpkin seeds.
- Drizzle with olive oil and sprinkle in rosemary and sea salt. Toss to coat evenly.
- Spread the mixture on a parchment-lined baking sheet.
- Roast for 8–10 minutes, stirring once halfway through, until everything is golden and fragrant.
- Let cool slightly before serving. Store in an airtight container for up to a week.
Roasted Pistachios with Sea Salt
Ingredients
1 cup shelled pistachios
1 teaspoon olive oil
½ teaspoon sea salt
Optional:
½ teaspoon smoked paprika (for a savory kick)
½ teaspoon ground cinnamon (for a sweet twist)
Instructions
- Preheat oven to 350°F.
- In a bowl, toss pistachios with olive oil, sea salt, and your choice of paprika or cinnamon.
- Spread pistachios on a parchment-lined baking sheet in an even layer.
- Roast for 6–8 minutes, watching closely to avoid over-toasting.
- Let cool and enjoy warm, or store in an airtight jar for snacking all week.
