Savory Pistachio Snack Mix

Ingredients

½ cup shelled pistachios

½ cup chickpeas

½ cup pumpkin seeds

1 tablespoon olive oil

1 teaspoon chopped fresh rosemary (or ½ tsp dried)

Pinch of sea salt (to taste)

 

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the chickpeas, pistachios, and pumpkin seeds.
  3. Drizzle with olive oil and sprinkle in rosemary and sea salt. Toss to coat evenly.
  4. Spread the mixture on a parchment-lined baking sheet.
  5. Roast for 8–10 minutes, stirring once halfway through, until everything is golden and fragrant.
  6. Let cool slightly before serving. Store in an airtight container for up to a week.

 

Roasted Pistachios with Sea Salt

Ingredients

1 cup shelled pistachios

1 teaspoon olive oil

½ teaspoon sea salt

 

Optional:

½ teaspoon smoked paprika (for a savory kick)

½ teaspoon ground cinnamon (for a sweet twist)

 

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, toss pistachios with olive oil, sea salt, and your choice of paprika or cinnamon.
  3. Spread pistachios on a parchment-lined baking sheet in an even layer.
  4. Roast for 6–8 minutes, watching closely to avoid over-toasting.
  5. Let cool and enjoy warm, or store in an airtight jar for snacking all week.
