Pistachio Lemon Cheese Ball



1 ball


2 packages Neufchatel cheese or light cream cheese
1 cup Non-fat or low-fat ricotta cheese
1 tablespoon Grated lemon peel
1 tablespoon Lemon juice
2 tablespoons Minced fresh basil or 2 teaspoons dried basil

¼ cup Shelled natural American pistachios, finely chopped


Beat cream cheese with ricotta, lemon peel and juice, basil and pistachios. Complete any of the variations below:

Cheese Ball:   Chill mixture until firm, shape into dome on appetizer tray.  Press an additional ¼ cup finely chopped pistachios onto outside.
