Chicken and Terragon-Pistachio Pesto Pasta

Ingredients
2-1/2 cups dried penne pasta
1/2 cup olive oil
1 cup freshly grated Parmesan cheese
1/2 cup roasted pistachios
a large bunch of tarragon, leaves stripped from the stems and chopped
grated zest and juice of 1 lemon
1 garlic clove, crushed and chopped
3 cooked chicken breasts, sliced
1 cup fresh arugula
salt and pepper
Instructions
Cook pasta until al dente. Drain and refresh in cold water. Drain thoroughly and toss with 1/4 cup olive oil.
In a bowl, add Parmesan, pistachios, tarragon, lemon zest and juice, garlic and 1/4 cup olive oil. Mix until smooth with a stick blender.
Put the pasta, pesto, chicken and a pinch of salt and pepper in a serving bowl then toss until chicken and pasta are coated evenly. Add arugula and gently toss again. Serve.
