Pistachio Summer Bounty Salad

Ingredients
For the salad:
1/3 cup roasted pistachios, chopped
1 cup sliced strawberries
1 cup watermelon, cubed
2 cups diced seedless English or Persian cucumber
2 tablespoons chopped mint
Bibb or red leaf lettuce leaves
For the dressing:
1/3 cup olive oil
2 tablespoons white vinegar
squeeze of lemon juice
1/4 ground pistachios
salt and pepper
Instructions
In a measuring cup, make the dressing. Whisk together ingredients until combined.
In a mixing bowl, add cucumber, strawberries, mint and chopped pistachios then toss to combine. Add salt and pepper.
Spoon inside lettuce leaves and dress with pistachio vinaigrette.
