Pistachio Turkey Salad (with Dill)

4 to 6 servings

Ingredients

3 cups Shredded, cooked turkey or chicken
1 cup Seedless red or green grapes, halved

½ cup Chopped green onion
¾ cup Natural American pistachios, lightly toasted; divided
½ cup Plain yogurt
2 teaspoons Lemon or lime juice
1 tablespoon Minced fresh mint
Salt and pepper to taste
Lettuce

Instructions

Combine turkey, grapes, green onion and ½ cup pistachios.  Coarsely chop remaining pistachios; reserve.  Mix together yogurt, lemon juice, mint and combine with turkey mixture.  Season to taste.  Serve on lettuce-lined plate; sprinkle with chopped pistachios.
