International soccer star, Jesse Lingard, follows the advice of a nutritionist to help him fuel up for soccer matches and recover from the demanding physical game. Food is key to recovery in sports as well as in personal training.
On game days, American pistachios and bananas are his go-to snacks. His meals include chicken, fish, eggs and pasta. Below is a recipe created for Jesse by Nigel Mitchell from the English Institute of Sport.

American Pistachios

Pistachio Crusted Chicken

Yield: 1 serving

Ingredients
1 chicken or fish
¼ cup pistachios, roasted,
    unsalted, kernels only
¼ shallots, raw
3 ½ tsp peppers, capsicum, chilli, red, raw
3 ½ tsp olive oil
3 ½ tbsp tomato puree
½ tsp paprika
½ tsp cumin seeds, ground
2 large eggs
1 serving penne pasta, boiled

Instructions: Preheat the oven to 350°F. Place parchment in a small baking pan. Put all of the ingredients (excluding the chicken, fish and pasta) into a blender and give it a good blast until smooth. Season with salt and pepper. Coat the chicken or fish generously. (Store extra in an airtight container and refrigerate.)

Bake 30 minutes or until juices are clear. While the chicken or fish is baking, boil the pasta, following the directions on the package. Serve on a bed of drained Penne pasta.
