Green Energy Overnight Oats

Ingredients

¼ cup dry old fashioned rolled oats

¾ cup protein rich unsweetened plant milk (like pea or soy)

1 large, pitted date, minced

½ teaspoon plus a pinch cinnamon, divided

½ cup shredded raw zucchini

½ green apple, minced

¼ cup shelled pistachios, chopped and divided

1 kiwi, peeled and sliced

Instructions

In a small blender or food processor combine the oats, plant milk, date, and the half teaspoon of cinnamon. 

Transfer to a small bowl and fold in the zucchini, apple, and half of the pistachios. 

Arrange the kiwi slices along the sides of a small serving jar and fill the jar with the oat mixture. 

Garnish the top with the pinch of cinnamon and remaining pistachios and refrigerate overnight.
