Lentil Pistachio Burger



4 servings


155 g brown lentils, pre-cooked

1 onion

2 cloves of garlic

200 g shiitake mushrooms

3 tbsp olive oil

15g parsley

50 g pistachios

1 egg (M)

Salt, pepper (or chili flakes)

1 teaspoon smoked paprika powder

1/2 teaspoon oregano, dried

1 lemon

3 tbsp breadcrumbs


Plus: burger buns, lettuce, tomato and herb quark or burger sauce


Rinse the lentils, drain well and place in a food processor. Peel and dice the onion and garlic. Clean the mushrooms with a kitchen towel and cut them into pieces.

Heat 1 tablespoon of olive oil in a pan and fry the onion, garlic and mushrooms for 5-10 minutes until golden brown. Then add to the lentils and mix together until a coarse puree is formed. Put the puree in a bowl.

Finely chop the parsley and pistachios. Add to the bowl with the egg, spices and breadcrumbs. Grate the lemon peel and mix everything together. Form 4 burger patties from the mixture.

Heat the remaining olive oil and fry the lentil patties until crispy on both sides. Serve on burger buns with lettuce, tomatoes and sauce and enjoy.
