Pistachio + Apricot Curried Brussels Sprouts

Tell me that you hate Brussels sprouts and this is the salad I’ll make to change your mind.





1 cup roasted & salted pistachios, shelled

1 pound Brussels sprouts

3/4 cup mayo

2 tablespoons curry powder

1 tablespoon mango chutney

Juice of two lemons

1/3 cup dried apricots, sliced

Fresh mint leaves

Salt & pepper


  1. Shave Brussels sprouts on a mandolin
  2. In a small bowl, mix mayo, lemon juice and curry powder
  3. Toss Brussels sprouts, apples, pistachios and apricots in dressing
  4. Garnish with mint
