Pistachio Horchata


4 servings


2 cups pistachios, salted

1 cup white rice

1 cup 2% milk

4 packets monk fruit or 1/2 cup of sweetened condensed milk

1 cinnamon stick

1 tsp vanilla

34 oz water


In a frying pan over medium heat, add the pistachios and cinnamon stick, toast for a few minutes. Move the toasted pistachios and cinnamon stick to a bowl and add hot water and white rice. Let it rest for 2 hours.

Strain mixture in a jug and add vanilla and Monk fruit. Shake well and serve with ice. Enjoy with more pistachios on the side.

*it can be sweetened with condensed milk to taste and it is even more flavorful
